Abstract
With the development of science and technology, the Japanese eating habits became more similar to those of Europeans or Americans. The food self-sufficiency rate in Japan decreased from 79% to 40%. In spite of depending on foreign foods, Japanese make enough the cooking, and do leftovers. Garbage is currently incinerated at high temperatures. The action of garbage burning violates the Japanese culture “Mottainai”. With this waste, both agriculture and forestry decline. The forestry without the successor became the abandoned land, and it has been bought to the overseas capitalist. The keys which escape from the crisis of agriculture and forestry are in the Japanese culture “Mottainai”.
